cinnamon sugar pancakes



 cup gluten free flour

1/2 tbsp baking powder

1/2 tbsp coconut sugar

1/2 tsp cinnamon

1 cup almond milk

Juice of 1/2 lemon

1 flax egg

Dash of vanilla

Dash of salt


  1. Create your flax egg by combining 1 tbsp of ground flax with 3 tbsp of water. Combine your almond milk and lemon juice in a separate boil. Let both the flax egg and the lemon/milk mixture sit for 5 minutes.

  2. Combine all of the dry ingredients into a bowl

  3. Mix in the finished flax egg, the finished milk/lemon mixture, vanilla, and salt

  4. Mix all of the ingredients together until smooth

  5. Cook pancakes of medium-high heat and add a sprinkle of cinnamon & sugar on top of each pancake while cooking

  6. Top with maple syrup and enjoy!
